Ingredients

  • 1 (0.3 oz) box sugar free orange Jell-O
  • 1 ( 1 oz.) box instant sugar free vanilla pudding
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 ( 8 oz.) sugar free cool whip topping 
  • 1 (14 oz.) can no sugar added mandarin oranges, drained 
  • 1 cup fat free cottage cheese

Instructions

  1. In a large mixing bowl combine sugar free orange Jell-O and boiling water.
  2. Whisk until Jell-O dissolves.
  3. Add cold water and allow to chill for 10 minutes in the refrigerator.
  4. Whisk in sugar free vanilla pudding mix until smooth. Chill in the refrigerator for another 15 minutes or until it slightly thickens.
  5. Remove from refrigerator and fold in the sugar free cool whip, mandarin oranges, and fat free cottage cheese.
  6. Enjoy! Store leftovers in an airtight container in the refrigerator for up to 5 days.
