Weight Watchers Peanut Butter Swirl Brownies

These tasty peanut butter swirl brownies have just three Weight Watchers points per serving. We gave fudgy boxed brownies a WW makeover. The salty-sweet PB swirl becomes weight watchers -friendly when you use can’t-live-without-it pantry staple, powdered peanut butter.
Ingredients
- Cooking spray
- 15 ounces -box of sugar free brownie mix (the best sugar-free brownie mix we’ve tried is $3/box with free shipping here)
- ½ cup unsweetened applesauce
- ¼ cup fat free milk
- 1 large, lightly beaten egg
- 1 cup powdered peanut butter (my preferred PB powder is currently on sale and shipping is free here)
Instructions
- Preheat the oven to 350°F. Coat a baking dish with cooking spray.
In a large bowl, whisk together the applesauce, milk, and egg. add the brownie mix. Stir well to combine. Transfer the batter to the prepared baking dish. - In a medium bowl, stir together the powdered peanut butter and ½ cup water until smooth. If the peanut butter is too thick (it should be about the same consistency as the batter), stir in an additional ½ to 1 tablespoon of water.
- Dollop the peanut butter all over the top of the batter. With a paring knife or butter knife, swirl the peanut butter into the batter.
- Bake until a wooden pick inserted in the center comes out with a few moist crumbs, about 30 to 32 minutes. Cool brownies slightly, then cut into 16 equal pieces.
