Weight Watchers Tip: This lighter version reduces the butter and sugar to help lower the SmartPoints. The exact points depend on your Weight Watchers plan, the brands you use, and how many servings you cut the pie into. For the lowest points per serving, make 12–16 slices and use less added sugar.
How to Make Weight Watchers Apple Pie
Step 1: Prepare the Crust
- In a large bowl, mix the flour, salt, and sugar.
- Add the cold, cubed light butter and mix until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, until the dough comes together.
- Divide the dough into two equal portions, shape into discs, wrap, and refrigerate for at least 30 minutes.
Step 2: Prepare the Apple Filling
- Peel, core, and thinly slice the apples.
- In a large bowl, combine the apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla extract.
- Mix well until the apples are evenly coated.
Step 3: Assemble the Pie
- Preheat the oven to 375°F (190°C).
- Roll out one portion of dough and place it into a 9-inch pie dish.
- Pour the apple filling into the crust and spread it evenly.
- Scatter the small pieces of light butter over the filling.
- Roll out the second portion of dough and place it over the apples. Seal the edges and cut a few slits in the top to allow steam to escape.
Step 4: Apply the Egg Wash
- Beat the egg with the skim milk in a small bowl.
- Brush the mixture over the top crust.
- Sprinkle with coarse sugar if desired.
Step 5: Bake the Pie
- Bake for 50–65 minutes, until the crust is golden brown and the apple filling is bubbling.
- If the edges brown too quickly, cover them loosely with aluminum foil.
- Remove from the oven and let the pie cool for at least 2–3 hours before slicing. This allows the filling to set.
Serving Tips
- Cut into 12–16 slices to help keep the Weight Watchers points per serving lower.
- Serve warm or cold.
- Store leftovers covered in the refrigerator for up to 4 days.
