Onion Soup Pork Tenderloin
Some recipes become favorites because they are impressive enough for company. Others are staples because they save supper on the busiest days of the week. This Slow Cooker 4-Ingredient Onion Soup Pork Tenderloin somehow does both.
The first time I made it, it was totally accidental. It was one of those Monday mornings where everything was happening at once. There were still breakfast dishes on the counter, emails were coming in faster than I could answer them, and I realized I had forgotten to think about dinner. I was tempted by the idea of ordering takeout, but I knew I had a beautiful pork tenderloin in the fridge.
I opened the pantry, hoping some inspiration would strike. I saw a packet of onion soup mix right away. Next to it was a can of cream of mushroom soup and behind both was a carton of low-sodium beef broth.
Four easy ingredients. That was dinner saved. I put the pork tenderloin in the slow cooker and whisked together the soup mix, mushroom soup and broth and poured it all over the meat and went for the day. By late afternoon, the whole house was filled with wonderful smells.
The kitchen wasn’t even in sight yet, but the smell of onions cooking low and slow filled every room. When I opened the lid, the pork looked unbelievably tender. One gentle mouthful told me all I needed to know.
It practically disintegrated. The sauce had thickened into a rich gravy with a flavor that suggested it had been simmering on the stove all day long. Each bite was comforting, hearty, and just what everyone needed after a long day. Dinner vanished quickly. The gravy was gone, every last bit from the slow cooker.
This is a recipe I make on a regular basis throughout the year because it’s just as good on busy weeknights as it is on leisurely Sunday dinners. Ingredients are still cheap, prep takes a few minutes and the slow cooker does the heavy lifting while life carries on.
