How do you keep pepper steak tender?
One great thing about this recipe is that, since it is cooked in a slow cooker, it doesn’t matter if your steak is a bit tough. The long, low, slow cook time keeps the pepper steak tender.

WW-Friendly Beef & Pepper Stew
Ingredients:
- 1 lb. lean beef stew meat, trimmed of visible fat
- 2 large bell peppers, chopped into large chunks
- 1 tsp. olive oil
- 3 tbsp. Worcestershire sauce
- 1 tsp. minced garlic
- 1 can (14 oz) low-sodium beef broth
- 1 can (14–15 oz) no-salt-added stewed tomatoes
- 1 tbsp. all-purpose flour
- 1 tsp. seasoned salt
WW Tip: Use lean beef and reduce the oil from 1 tbsp. to 1 tsp. to keep the Points lower without sacrificing flavor.
Instructions
- Heat 1 tsp olive oil in a large pot over medium-high heat.
- Add the beef stew meat and brown it on all sides, about 5–7 minutes.
- Add the minced garlic and cook for about 30 seconds.
- Add the Worcestershire sauce, beef broth, and stewed tomatoes. Stir well.
- Add the seasoned salt and bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for about 45–60 minutes, or until the beef becomes tender.
- Add the chopped bell peppers and continue cooking for another 10–15 minutes, until the peppers are tender but not mushy.
- In a small bowl, mix 1 tbsp flour with 2–3 tbsp cold water until smooth.
- Slowly stir the flour mixture into the stew.
- Cook uncovered for another 3–5 minutes, stirring occasionally, until the sauce thickens.
- Serve hot and enjoy!
