Ingredients
- 4 boneless, skinless chicken breasts
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp olive oil (or olive oil cooking spray)
- 2 cups steamed broccoli florets, finely chopped
- ¼ cup minced bell pepper
- ½ cup reduced-fat shredded cheddar cheese
- 4 oz reduced-fat (Neufchâtel) cream cheese, softened
- 2 tbsp grated Parmesan cheese
- 2 tsp minced garlic
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the broccoli, bell pepper, cheddar cheese, cream cheese, Parmesan cheese, garlic, salt, and pepper until well mixed.
- Slice a pocket into each chicken breast without cutting all the way through.
- Stuff each chicken breast evenly with the broccoli and cheese mixture. Secure with toothpicks if needed.
- Season the outside of the chicken with paprika, Italian seasoning, salt, and pepper.
- Lightly coat a baking dish or skillet with olive oil or cooking spray and place the stuffed chicken inside.
- Bake for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before serving.
