CHICKEN QUESADILLAS

INGREDIENTS

  • 4 Flour tortillas such as Carb Counter or Ole Extreme Welness Tortillas
  • 2 to 3 teaspoons of fajita seasoning
  • 1 cup of low fat cheddar cheese or reduced fat Mexican Cheese Blend
  • 2 chicken breastA

INSTRUCTIONS

Rub chicken in the fajita seasoning.

Cook chicken breasts in a skillet until done. Chicken is done when it is no longer pink in the middle and when the internal temperature reaches 165 degrees. If you are in a hurry and don’t want to cook chicken at all you can use rotisserie chicken.

Place one tortilla on a  non stick skillet and spray it with cooking Spray. Layer 1/4 cup of cheese and 1/4 cup chicken on top and the other tortilla.

The quesadilla will be done on one side when the tortilla is brown and the cheese is melted. Flip and wait till other side is brown.
