For this recipe, I recommend using Ruffles potato chips. Their ridges give just the right amount of crunch and salty flavor. Whether you want to go with white or standard chocolate is up to you. A darker chocolate will definitely tone down the sweetness if you want a more subtly sweet treat.

Ingredients

  • 2 cups prepared instant mashed potatoes (made with water)
  • 1 cup fat-free cottage cheese
  • 1/2 cup reduced-fat sharp cheddar cheese, shredded
  • 2 tablespoons grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons whole wheat flour (if needed, to firm up the mixture)
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the mashed potatoes, cottage cheese, cheddar cheese, Parmesan, egg, garlic powder, onion powder, and black pepper.
  3. If the mixture feels too soft, stir in the whole wheat flour.
  4. Chill the mixture for 30 minutes.
  5. Using a small cookie scoop, form 24 equal-sized balls and place them on a parchment-lined baking sheet coated with cooking spray.
  6. Lightly spray the tops with cooking spray.
  7. Bake for 18–22 minutes, or until lightly golden.
  8. For extra color, broil for 1–2 minutes at the end.
  9. Let cool for 5 minutes before serving or freezing.
