Ingredients:
1 1/4 cups self rising flour (1 cup for dough and the 1/4 cup to knead and roll out dough with)
1 cup Fat free Greek yogurt
1/2 cup 50% reduced fat cheddar cheese
8 oz lean ground beef or turkey
1 lg egg
1 medium onion chopped finely
1/4 cup unsweetened dill relish or pickles chopped
4 tsp mustard
Cook meat and onion in a medium sized frying pan on med/high heat until meat is browned and onion is softened. Salt and pepper to taste. Mix 1 cup of flour with Greek yogurt until well combined. Knead dough for about 5 minutes. Once dough is well kneaded, cut into 8 equal parts and roll out each part into roughly a 5 inch diameter circle. Put about 1 Tbsp of cheese in the middle of the dough, followed by 4 Tbsp of meat mixture, 1/2 Tbsp of relish and 1/2 tsp mustard. Pull sides of dough up and together and pinch to close. Place seam side down on a baking sheet lined with parchment paper. Brush balls with slightly beaten egg. Bake at 425 for about 15 minutes. Serve with mustard.
