Heirloom tomato sandwich Is One of my favs on a hot summer day… Cucumber, tomato, red onion lettuce, light mayo  sammy on toasted lite sourdough- just three weight watchers points!

Ingredients

Light mayonnaise
1 Tbsp
Fresh basil
2 Tbsp, finely chopped
Black pepper
1 tsp, divided
Garlic powder
¼ tsp
Heirloom tomato
2 large, cut into ½-inch-thick slices
Kosher salt
½ tsp
lite sourdough bread
2 slices
Red onion
Several slices
Lettuce
Cucumber
Several sliceso

Instructions

In a small bowl, stir the mayonnaise, ½ tsp of the black pepper, basil and the garlic powder.
Spread the tomato slices out on a layer of paper towels. Sprinkle with the salt and the remaining ½ tsp black pepper.

Add the tomato slices, onions, lettuce among to one slice of bread/ Spread the mayonnaise on the remaining Breasd. Top the  sandwich with one the bread slice and Cut the sandwich in half.
Serving size: 1 sandwich
Notes

Because tomatoes are the star attraction in this sandwich, be sure to select the ripest ones possible. They should feel heavy for their size and give a little when gently squeezed. Slice with a super-sharp knife so as not to squish out the juices. Serve the sandwiches immediately.
