Zero Point Strawberry Ice Cream

Ingredients:
2 cups frozen strawberries
1 ripe banana, sliced and frozen
1/2 cup non-fat Greek yogurt
1-2 tablespoons zero-calorie sweetener (optional, adjust to taste)
1 teaspoon vanilla extract (optional)
Instructions:

  1. Prepare the Frozen Fruit:
    Wash and hull the strawberries, then spread them out in a single layer on a baking sheet lined with parchment paper. Place the baking sheet in the freezer and freeze the strawberries for at least 4 hours, or until completely frozen.
    Similarly, peel and slice the ripe banana, then spread the banana slices in a single layer on a separate baking sheet lined with parchment paper. Freeze the banana slices for at least 4 hours, or until completely frozen.
  2. Blend the Ingredients:
    Once the strawberries and banana slices are frozen, remove them from the freezer.
    In a blender or food processor, combine the frozen strawberries, frozen banana slices, non-fat Greek yogurt, and zero-calorie sweetener (if using).
    Optionally, add vanilla extract for additional flavor.
    Blend the ingredients on high speed until smooth and creamy, scraping down the sides of the blender or food processor as needed. If the mixture is too thick, you can add a splash of water or non-dairy milk to help it blend.
  3. Serve and Enjoy:
    Once the mixture is smooth and creamy, transfer it to a container with a lid and place it in the freezer for about 30 minutes to firm up slightly.
    After chilling, scoop the zero point strawberry ice cream into bowls or cones.
    Garnish with fresh strawberry slices or a mint leaf if desired.
    Serve immediately and enjoy the refreshing and guilt-free treat!
  4. Storage:
    Any leftover strawberry ice cream can be stored in an airtight container in the freezer for up to one week. Allow it to thaw for a few minutes before scooping and serving.
