You can also go with dark chocolate for a richer taste or switch to white chocolate for a sweeter flavor.

Weight Watchers No-Bake Maple Pecan Bites

Ingredients

  • ½ cup sugar-free dark chocolate chips, melted
  • 1 cup finely chopped pecans
  • ½ cup crushed reduced-fat graham crackers
  • 2 tbsp brown sugar substitute
  • 1–2 tbsp sugar-free maple syrup
  • 2 tbsp water
  • 1 tsp rum extract
  • 1 tsp vanilla extract
  • Pinch of salt (optional)

Instructions

  1. In a bowl, combine the chopped pecans, crushed graham crackers, brown sugar substitute, and a pinch of salt.
  2. Stir in the sugar-free maple syrup, water, rum extract, and vanilla extract until the mixture holds together.
  3. Fold in half of the melted chocolate.
  4. Roll the mixture into 16 small bite-sized balls and place them on a parchment-lined tray.
  5. Drizzle the remaining melted chocolate over the bites or lightly dip the bottoms in chocolate.
  6. Refrigerate for 30–60 minutes, or until firm.
