This recipe is gluten free, Slimming World and Weight Watchers friendly

  • WW Smart Points – 13

*if not counting the cheese as part of your Healthy Extra A choice, add 3 syns. 

Ingredients

  • 650g of potatoes, sliced in chips
  • approx 1 cup of leftover Slow Cooker Pulled Pork or Stove Top Pulled Pork, warmed up
  • ½ tsp of salt
  • red pepper, diced
  • green pepper, diced
  • red onion, diced
  • 3 green onions, sliced
  • 30g of cheddar – 1 HEa’s
  • cooking oil spray

Instructions

  1. Rinse the potatoes until cold water
  2. Pat dry with some kitchen paper
  3. Add to a bowl with salt, spray with cooking oil spray and shake to coat, give another spray of cooking oil spray and shake again.
  4. Spread out on a baking tray lined with parchment paper.
  5. Place in the oven and bake for 40mins (take out half way through just to rotate for even browning)
  6. Transfer fries to a baking dish
  7. Top with the leftover pulled pork, red onion, red pepper, green pepper and cheddar
  8. Place bake in the oven for 8-10 mins until cheese is melted
  9. Sprinkle with chopped green onions
