Weight Watchers  Chicken Salad Recipe

  • 1 LB chicken breasts (boneless/skinless)
  • 1 small red onion (finely chopped)
  • 1 tsp garlic (paste)
  • 4 TBSP fresh lime juice
  • 2 tsp red pepper flakes
  • 1 TBSP honey .         
  • 3 TBSP olive oil .      
  • 4 C cabbage (shredded)
  • 1 red pepper (diced)
  • 3 carrots (grated)
  • 2 scallions (chopped)
  • 1/4 C fresh basil (chopped)
  • 1/4 C fresh cilantro (chopped)
  • One TBSP Cashew Nuts per serving.


  1. Prep your skillet with cooking spray. Sprinkle the chicken with salt and pepper and set aside.
  2. Add onion and garlic in the skillet. 
  3. Cook for two minutes. Add your chicken to the skillet with the onion and garlic.
  4. Saute the chicken until browned and fully cooked.
  5. Set the chicken aside to cool.
  6. Once cooled dice the chicken.
  7. Now to make the Thai Salad Dressing:
  8. Add the lime juice, ginger, and red pepper flakes..
  9. Whisk together to combine all ingredients.
  10. Slowly add the olive oil whisking as you add it.
  11. Add honey and whisk. 
  12. To Make the salad:
  13. Combine the cabbage, red pepper, carrots, scallions, basil, cilantro and diced chicken.
  14. Toss with dressing.
  15. Mix well.
  16. Top with cashews.
  17. Serve.
