Previously, every time I cooked zucchini I sauteed it with other veggies, which is fine most days. But when you are changing your lifestyle to become healthier, the same dish gets boring quickly!
These zucchini chips were a game-changer after I got my air fryer! Honestly, I couldn’t believe the crisp that I got without all the horrible effects of “fried food.”
Air Fryer Zucchini Chips
Ingredients for Air Fryer Zucchini Chips:
2 medium zucchini
1 egg beaten
1/2 cup of panko breadcrumbs
1 tsp paprika
Salt and pepper to taste
Oil for spraying, or butter (Parkay)
Air Fryer Zucchini Chips
This delicious side dish serves 4 and only 2 Smart Points (Weight Watchers Freestyle) per serving.
- 2 medium zucchini
- 1 egg beaten
- 1/2 cup of panko breadcrumbs
- 1 tsp paprika
- Salt and pepper to taste
- Oil for spraying, or butter (Parkay)
Slice the zucchini into circles
Combine all of the dry ingredients into a bowl and mix.
Dredge the zucchini into the beaten egg then into the panko mix.
Place on the pan or in the basket (depending on which air fryer you have) in a single layer
Cook for 10 minutes at 400 degrees or until crispy.
