Looking for a sweet and crunchy, melt in your mouth cookie? These meringue cookies are it!

1 blue smart point for the entire recipe
Makes about 23 cookies… you can have 8.5 for zero points

3 egg whites
Pinch of salt
1/8 tsp cream of tartar
1/2 tsp vanilla
1/2 cup Splenda

Beat egg whites until foamy. Add salt, vanilla and cream of tartar, then beat until soft peaks form. Slowly add Splenda and beat until stiff, glossy peaks form. Drop by spoonfuls onto parchment lined baking sheet. Or use a piping bag to make them pretty. Bake for one and ahalf to two hours at 225°.

Note, can add 1 1/4 Tablespoons of cocoa powder for no additional points. Add 1/2 teaspoon of any artificial flavorings (lemon, raspberry, coconut, almond) instead of the vanilla for no extra points.
