Creamy steel cut oats with mushroom and kale

This is a savory oatmeal and you can really switch it up depending on the veggies you have on hand! the whole recipe is only three weight watchers points!

Ingredients

  • 1 cup steel cut oats
  • 4 ounces cremini mushrooms
  • 1 tap better than bouillon vegetable bouillon
  • cooking spray
  • kale

Instructions

  1. make the steel cut oatmeal as per the can -i use one cup and just stir in a tsp of Better Than Bouillon vegetable bouillon.
  2. While that is cooking, I cooked sliced mushrooms, in this case about 4 oz cremini, mushrooms in a skillet with olive oil cooking spray until roasted and all the liquid is cooked out, then stir them into the cooked oatmeal with some chopped kale. The kale will wilt/cook in the hot oatmeal. That’s it. Sometimes I use broccoli, spinach, or other seasonal veggies, Anything works. Let me know how you adapt
