keto  Cajun Chicken Alfredo w/ Zuchinni Noodles

Recipe:

Alfredo Sauce (Makes 3-4 servings)

3 ounces of Cream Cheese
1/2 cup of Heavy whipping cream
1/3 cup of Parmesan Cheese
1/3 cup of Mozzarella Cheese
2 teaspoons of Butter
Garlic Powder (1 teaspoon or adjust to your liking)
Onion Powder (1 teaspoon or adjust to your liking)
Salt (1/4 teaspoon or adjust to your liking)
Pepper (1/4 teaspoon or adjust to your liking)

Start with melting the butter in a pan on low heat (I used the same pan that I seared chicken in to get extra flavor) once the butter melts, add in Heavy whipping cream and Cream Cheese, and stir on low heat until the Cream Cheese blends in with the heavy whipping cream and then add the Parmesan and Mozzarella cheese and continue to stir on low heat. Once you have that creamy sauce consistency, season with Garlic Powder, Onion Powder, Salt and Pepper.

Pan Seared Cajun Chicken

**You can use whatever cut of chicken you like, I like to use chicken tenderloins.

1.0 lb Pack of Boneless Skinless Chicken Breast Tenderloins
2 tablespoons of Olive Oil
McCormick Cajun Seasoning (2 teaspoons or adjust to your liking)
Garlic Powder (1 teaspoon or adjust to your liking)
Onion Powder (1 teaspoon or adjust to your liking)
Salt (1/2 teaspoon or adjust to your liking)
Pepper (1/4 teaspoon or adjust to your liking)
Parsley (1 tablespoon)

Season the chicken and place in a plastic ziplock bag to marinate in the fridge, if you have time. If not, go ahead and sear once seasoned.

Sear the chicken tenderloins in 2 tablespoons of Olive Oil on medium high heat, 4 minutes on both side. *** Cooking times may vary based on the size of your chicken.

Zuchinni Noodles

2 large fresh Zuchinni
3 teaspoons of Olive Oil
Garlic Powder (1/2 teaspoon)
Onion Powder (1/2 teaspoon)
Salt (1/4 teaspoon)
Pepper (1/2 teaspoon)
Spiraler (I got mine from Target for $9.99, a Veggetti Spiral Vegetable Cutter) ** If you don’t have one, you can just cut however you’d like

Wash Zuchinni and then use your spiralizer to make the noodles. If you don’t have a spiralizer, cut up your Zuchinni to your liking.

Season Zuchinni with garlic powder, onion powder, salt and pepper and set to the side
Heat 3 teaspoons of Olive Oil in a pan and sautee your Zuchinni Noodles for about 3 minutes

Put it all together

Pour Alfredo Over Zucchini and stir in, cook all together on medium low for about 3 minutes. I add the cooked chicken to the top and let it all simmer for about 2 minutes and then I Eat!!! Please tweak the receipe however you’d like and the seasonings to your taste!!!! I hope you enjoy!
