Lightened Up Lasagna Roll Ups
Lasagna Roll-ups!! – 9 points per serving (2 rolls) This recipe was fantastic. Makes 7 servings.
Ingredients
- Whole grain lasagna noodles – 14 sheets for 28 points
- Part skim ricotta – 15 oz for 20 points
- Fat free cottage cheese – 15 oz for 0 points
- Grated Parmesan cheese – 31g for 5 points
- Chopped spinach – 4 ounces once SQUEEZED dry about 3/4 of a 12 oz bag
- Trader Joe’s lite mozzarella cheese – 204g for 13 points
- Tomato sauce – 2 28 oz cans
- Tomato pasta – 1 small can
- Onion – 1 large / 4 small – diced
- Carrots – 2 medium carrots – FINELY grated
- Garlic – 5 to 6 cloves
- 3 tbsp Italian seasoning
- 2 tsp garlic powder not pictured
- 2 tsp onion powder not pictured
- Salt / pepper
Instructions
- Cut onion, chop garlic, finely grate carrot. Saute above over medium to medium low heat, using olive oil spray. Cook until onions are translucent. Season with salt / pepper.
- Add tomato paste, stir to combine and allow to cook for a couple minutes.
- Add sauce, 2 tbsp of Italian seasoning, more salt / pepper and allow to simmer on low heat for about 30 minutes.
- Boil pasta per package instructions.
- Combine ricotta, cottage cheese, parm cheese, spinach, onion pwdr, garlic pwdr, 1 tbsp Italian seasoning & salt / pepper.
- Spread mixture evenly on 14 sheets, approx 1/4 cup filling per roll. I laid them all out & divided filling evenly before rolling.
- Layer rolls evenly, cover w/ sauce and top w/ mozz cheese.
- Stored mine in the fridge & cooked the next day. 400* for about 35 to 45 minutes.
- Served with a small side salad
