Weight Watchers Broccoli Cheddar Soup 

I love Panera Bread’s Broccoli Cheddar Soup. I was checking the WW app to see how many points it is, it said 1 cup is 8 points for my Personal Points. 

Although the soup is filling and delicious, that seemed like a lot of points to me. I knew I could lighten it up!

With my recipe I can have 1 1/2 cups for only 5 points.

Yield: 6 servings (1 1/2 cups per serving)

Ingredients

  • 1/2 cup celery, chopped
  • 1/2 cup carrots, chopped
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tablespoon light butter
  • 1/4 cup all purpose flour
  • 4 cups chicken broth
  • 12 oz. frozen chopped broccoli
  • 1 1/2 cups reduced fat sharp cheddar cheese
  • 3/4 cup fat free half and half

Instructions

  1. Melt the butter in a Dutch oven or soup pot. Add the celery, carrots and onion, cook for 5 minutes. Add the minced garlic the last minute. 
  2. Add the flour and stir well. 
  3. Slowly stir in the chicken broth. Add the broccoli and simmer for 10 minutes. 
  4. Add the sharp cheddar cheese and stir until the cheese is melted. Stir in the half and half. Enjoy!
