I love Panera Bread’s Broccoli Cheddar Soup. I was checking the WW app to see how many points it is, it said 1 cup is 8 points for my Personal Points.
Although the soup is filling and delicious, that seemed like a lot of points to me. I knew I could lighten it up!
With my recipe I can have 1 1/2 cups for only 5 points.

Yield: 6 servings (1 1/2 cups per serving)
Ingredients
- 1/2 cup celery, chopped
- 1/2 cup carrots, chopped
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/2 tablespoon light butter
- 1/4 cup all purpose flour
- 4 cups chicken broth
- 12 oz. frozen chopped broccoli
- 1 1/2 cups reduced fat sharp cheddar cheese
- 3/4 cup fat free half and half
Instructions
- Melt the butter in a Dutch oven or soup pot. Add the celery, carrots and onion, cook for 5 minutes. Add the minced garlic the last minute.
- Add the flour and stir well.
- Slowly stir in the chicken broth. Add the broccoli and simmer for 10 minutes.
- Add the sharp cheddar cheese and stir until the cheese is melted. Stir in the half and half. Enjoy!
