1 weight watchers point per serving zucchini bread. Makes 26 servings!

The total for all was 33 points. I like small portions, so I cut them into 26 servings. I also updated the recipe. I don’t peel my zucchini, but grate it. The spirals were the closest thing I could find.

Ingredients

  • Gold Medal Self rising flour
  • 2 1/2 cup s
  • Egg s
  • 3 item s (large)
  • Table salt
  • 1 tsp
  • Unsweetened applesauce
  • 1 cup s
  • Baking soda
  • 2 tsp
  • Ground cinnamon
  • 3 tsp
  • Vanilla extract
  • 2 tsp
  • Fresh zucchini spirals
  • 2 cup s
  • Splenda Granulated no calorie sweetener
  • 1 cup s

Instructions

  1. 1 Grate the zucchini. Use a cheesecloth to press out water. Add 2 cups to a mixing bowl.
  2. 2 Add 3 eggs, 1 tsp salt, 2.5 cups of self rising flour, 2 tsp baking soda, 3 tsp
  3. cinnamon, 1 cup of applesauce, and 1 tsp vanilla. Mix.
  4. 3 Coat a bread pan with Pam. Add mix
  5. until about 3/4 full. Top with cinnamon/
  6. Splenda mixture.
  7. 4 Bake at 350 for 40 minutes or until a
  8. toothpick comes out clean.
