Lightened Up Rice Pudding

This Lightened Up Rice Pudding is a family friendly recipe! It’s creamy, sweet, and so easy to make! Serve as a sweet breakfast, midday snack, or for an easy dessert!

Ingredients

  • 1 1/2 cups water
  • 3/4 cup long grain white or brown rice (uncooked, not instant)
  • 1 egg, slightly beaten 
  • 2 cups skim milk or unsweetened almond milk
  • 1/4 tsp salt
  • 1/3 cup white granulated or brown sugar substitute- I use Lakanto Golden Monkfruit Sweetener
  • 1 tsp vanilla extract
  • 1/4 cup raisins, if desired
  • Garnish: cinnamon or nutmeg

Instructions

  1. Combine water and rice over high heat in a saucepan and bring to a boil. Reduce heat to medium low, cover, and simmer until tender, for about 40 minutes. 
  2. In a different saucepan combine cooked rice, 1 1/2 cups skim milk or unsweetened almond milk, sugar substitute, and salt.  Cook over medium heat until it thickens, 15 to 20 minutes.
  3. Add remaining 1/2 cup skim or unsweetened almond milk, and beaten egg. Stir until well combined. 
  4. Cook for another 2 minutes, stirring constantly. Remove from heat and stir in vanilla extract.
  5. Sprinkle or stir in raisins, cinnamon or nutmeg, if desired.
  6. Serve warm or at room temperature. 

Notes

Instant Pot Directions:

1. Combine rice, water, and sugar substitute into the Instant Pot.
2. Press “sauté” and bring to a boil. Cover with the lid and switch to “seal” position
3. Press the “rice” button on the instant pot or use the Pressure Cook function on the Instant Pot and adjust to low pressure. Set cooking time for 16 minutes. 
4. After cooking, press “cancel” and let the rice pudding sit for 15-20 minutes. Meanwhile, in a medium mixing bowl, combine the egg, milk, vanilla, and salt. 
5. After the 15-20 minutes is complete-do a quick release, and remove the lid. 
6. Stir in the egg & milk mixture and continue stirring until well combined. 
7. Press sauté and bring the mixture to another boil. Then stir, turn off instant pot.
8. Sprinkle or stir in 1/3 cup raisins, cinnamon or nutmeg, if desired.
